This gut friendly breakfast bowl is great for busy mornings. Soaking oats overnight makes them easier to digest. Served with a mix of seeds, this muesli is full of fibre, plant-based protein and a variety of vitamins and minerals.
Ingredients
For the bircher muesli:
25g porridge oats
1 teaspoon chia seeds
1 teaspoon cold milled flax seeds
1 teaspoon hemp seeds
50g plain coconut yoghurt
1 eating apple, grated
⅛ teaspoon ground cinnamon
To serve:
Extra spoonful of coconut yoghurt
Sprinkle of pumpkin seeds
Drizzle of maple syrup
Pinch of ground cinnamon
Method
In a medium bowl combine the porridge oats, chia seeds, cold milled flax seeds, hemp seeds, coconut yoghurt, grated apple and the ⅛ teaspoon of cinnamon. Stir until combined, then cover and leave in the fridge to soak overnight.
The next morning spoon the bircher muesli into a bowl. Top with a spoonful of coconut yoghurt, sprinkle with pumpkin seeds and drizzle with maple syrup, and dust over some extra cinnamon. Eat immediately.
