A delicious brunch idea if you want to mix up your sweet options and try something new. The berries, maple and vanilla give it a lovely flavour.

Ingredients
2 thick slices bread
Handful berries, roughly chopped
For the custard
4 tablespoons coconut yoghurt
1 tablespoon maple syrup
1 teaspoon vanilla bean paste/extract
1 tablespoon gram flour
Method
Preheat oven to 200°C / 180°C fan / 392°F. Place all of the custard ingredients into a bowl and whisk to form a smooth custard sauce.
Take the 2 slices of bread and using the back of a spoon, press down in the centre of each slice to create a well, leaving a 2cm border.
Place the bread on a lined baking tray and fill each slice with the custard, smoothing it over evenly. Top with the berries and bake for 20–25 minutes until the bread is crisp, the custard has set, and the berries are soft. Serve warm — any leftovers can be eaten cold.
