Overnight Oats - The Gut Stuff

Ingredients

40g (11/z oz) oats
150ml (5 fl oz) milk kefir, yogurt or milk (dairy. plant. nut or other milk)
1 apple, grated (skin on)
1-2 tsp nut butter (such as peanut, almond or cashew) or mixed seeds (pumpkin, sunflower, seame. flaxseed or linseed)
1 tsp ground cinnamon

Method
1. Place all the ingredients into a 500ml (18-fl oz) jar, stir well, cover with a
screw-top lid and place in the fridge for a minimum of 2 hours or ideally overnight.

2. When the oats have hydrated and thickened the mixture, pour the contents of the jar into your bowl. Add the toppings of your choice just before serving.

Store in the fridge for up to 4 days.

FLAVOUR COMBOS
Fibre - 8.Sg
carrot cake - Swap the grated apple for a grated carrot (skin on) and add 1teaspoon honey or maple syrup and swap the ground cinnamon for 1 teaspoon allspice. Swap the nut butter or mixed seeds for a handful of chopped walnuts to top.

blueberry cobbler - Swap the grated apple for a handful of blueberries and add 1 tablespoon chia seeds.

spiced pear - Swap the grated apple with a chopped pear (skin on). Swap the ground cinnamon for 1 teaspoon allspice and swap the nut butter or mixed seeds for a handful of chopped walnuts to top.
