Our friend Lizzie King has made us this Smoky Lentil and Tomato Soup. Packed with plenty of veg and plant goodness to feed our microbes.

Serves 3/4
Ingredients
2 tbsp olive oil
3 onions, finely chopped
3 cloves garlic, minced
3 celery stalks, chopped
1 tsp ground cumin
1 tsp ground coriander
2 tbsp tomato puree
1 cup red lentils
3 cups chicken or vegetable stock
1 tin cherry tomatoes
Sea salt and pepper
Handful fresh parsley
1 lime
Method
Heat oil in large pan. Gently fry onion for 5/10 minutes, add garlic and celery with dry herbs, fry for another few minutes until fragrant.Add tomato puree, lentils and increase heat.
Add stock and tin of tomatoes and bring to the boil. Lower heat, and simmer with lid on for 15-20 minutes, stirring occasionally, and adding boiling water if necessary.
Once lentils are very tender, remove from heat.
Blend if you’d rather a smooth soup, and add a pinch of cayenne or chilli flakes to taste, sea salt and pepper.
Serve both dishes with a dollop of Harissa, fresh parsley snipped over and a squeeze of lime.
